Sun Dried Tomato Spaghetti

The Italian cuisine is famous for its cheap yet tasty ingredients. It is possible to make a gourmet dish with only a few simple ingredients, that make each dish unique and excellent. This time, we are going to Sicily and we shall take advantage of the taste and aroma of the products, native of this land. 

HOW TO

Ingredients for 4 people:

400g of spaghetti

1 jar of sun dried tomatoes in oil

4 branches of parsley

2 cloves of garlic

Extra virgin olive oil


Here we have a fast and easy recipe, let's begin preparing our sun dried tomato spaghetti: drain the tomatoes in oil and chop the tomatoes coarsely. Next put them in a bowl where we will add the condiment to the pasta. Chop the garlic and the parsley together.

In a non stick pan, heat 2 tablespoons of extra virgin olive oil and toast the breadcrumbs until golden, then put in the bowl with the tomatoes and mix them together well. Take a new non stick pan and fry the garlic and parsley in the resting oil, making sure non to burn it to avoid a bitter taste.

Let the spaghetti cook in abundant salted water then drain it when it is “al dente” and toss it in the pan with the mixture (I would also add some chilli pepper). Pour it all into the large pan with the tomatoes and the breadcrumbs, mix them together well and serve.

A good Sicilian red wine will make this dish even tastier.
