Red Wine Risotto

Let's continue our tour through the typical Italian recipes and this time we are going to the north of the country: the red wine risotto is a dish typical of Piedmont, an easy dish to prepare and very tasty that can be prepared in various ways.ctofay we have decided to give you two products from Trentino Alto Adige.



  • 320g of carnaroli rice
  • 500ml of full bodied red wine
  • 80g of butter
  • 100g of grated  reggiano
  • 250g of fresh goats cheese
  • 100g of sliced speck
  • 1 l vegetable stock
  • 2 shallots
  • 4 basil leaves
  • 4 tbsp extra virgin olive oil

    Finely chop the shallots and let them brown in the oil on a moderate heat, pour the rice in a casserole pan, turn the heat up and let it lightly toast; let the carnaroli rice toast a little on a high heat as we begin to add the wine, and then the stock.

    A few minutes before the end of cooking, add the speck to an oven dish and bake at 180 degrees until crisp. Finely chop the basil and brown in extra virgin olive oil with the goat's cheese until the cheese is liquid.

    Serve the rice adding drops of goats cheese and the slices of speck.
