Cheese muffins are a savoury variation of one of the most famous English sweets. They are perfect when served as an aperitif or as an accompaniment to a meal. Savoury muffins can also be made with vegetables, we advise you to use high quality cheese. At the end to break the muffins in half and and why not add a slice of ham or salami!
• 200 g Milk
• 2 Eggs
• 70 g butter
• 250 g 00 Flour
• 100 gr Parmigiano Reggiano cheese
• 80 g grated Pecorino cheese
•1 tsp Salt
• 1 packet of yeast for savoury cakes
• 120 g Asiago cheese
Let's begin making these tasty cheese muffins. First of all, grate the Asiago cheese or cut into small cubes. Pour the milk, the eggs and butter into a bowl and start to mix them together adding the flour, Parmesan cheese, Pecorino cheese, the salt and the yeast then the Asiago cheese to finish up.
Mix it all together well and pour the mixture into greased muffin tins up until the 3/4 mark. Place them in the oven for 20 minutes at 180 degrees.
As I said, muffins are great for an aperitif served with a good white wine.
