To prepare the Alpeggio Raschera Risotto first soak the dried chestnuts in cold water to “revive”them and then boil them in a pot with salted water flavoured with wild fennel.
In a pot put 4 tablespoons of extra virgin olive oil and sauté the onion, add salt and pepper to taste and add the rice and toast it for a few minutes. Following this, slowly add the vegetable broth to cook the rice.
At this point, add the diced Raschera and chestnuts, stir well and serve.
